Can you add “grandparent” and “great grandparent” to the relations area of the people profile?

The short answer is, we only let adding first-tier relationship, which is actually enough to identify all other sorts of relations. You can easily navigate from grandkids to their grandparents with just a few clicks. Therefore there is no need to directly add this information.
